Coconut Lime Popsicles with a Crumble

Good. grief. it is so hot outside! And oh the humidity! It's like stepping outside and into a giant sauna. Instant sweating ensues and I'm immediately wishing for a pool, the ocean, any body of water really. It's about this time of year that living in a land-locked state seems kind of sucky. Growing up in New England, the ocean was never far away, and then living in Florida, the ocean was even closer. I got spoiled...I probably should've appreciated it more. And now the ocean is a good 7-hour drive away and the closest I can get to feeling beach vibes is spraying Bumble and Bumble Surf Spray in my hair. Ugh.

With all of this heat and humidity and non-stop sweating, I needed a cold treat fix. Ryan and I have been experimenting with popsicle recipes lately, and this one became an instant favorite! It's incredibly simple (win), requires very few ingredients (even bigger win), and is just what you need after stepping outside into the glorious southern summer air for say, oh 2 minutes. 

Coconut Lime Popsicles with a Crumble
Makes 8 popsicles

Combine coconut milk, sugar, juices and zest in a blender and puree. Pour mixture through a strainer and into a bowl with a spout or a large measuring cup. Pour into ice-pop molds. Freeze for at least 4-5 hours.

After removing pops from the molds, roll the top of each popsicle in graham cracker crumbs.


1 14 oz can unsweetened (full fat) coconut milk
1/2 c sugar
1/4 c fresh lime juice
1/4 c fresh pineapple juice
zest of one lime
1/2 c crushed graham crackers (for the crumble)
