Acai Bowl

I'm super excited to share this recipe with you today, because a) it's incredibly simple, b) it's my go-to weekend breakfast during the warmer months (yesterday morning it was 37 degrees outside, but let's pretend shall we?), and c) it's SO good! I would seriously eat this every morning for breakfast if I had the time and the magical ability to keep it cold on my way to work. 

My husband, Ryan, was the one that introduced me to this little bowl of goodness. When we were living in Boston, one evening he started telling me about this amazing acai bowl he had while he was in California. So naturally, the next day we made it our mission to find a place that served acai. We found this tiny Brazilian cafe in Cambridge that consisted of about eight tables (in my opinion, these are always the best places - small and unassuming). We each ordered an acai bowl and took a seat by the window and waited in eager anticipation. Our bowls came out topped with granola, strawberries, bananas and honey. It was love at first bite. After we finished breakfast, I immediately googled how to replicate an acai bowl at home. Guys, it really is so easy. You just need a few Sambazon smoothie packs (Whole Foods always carries them) plus a few other frozen and fresh fruit options and voila, your healthy breakfast is served! The only thing you have to be careful of is not adding too much liquid, or your bowl will turn into a purple soup within seconds. I always start with less liquid and then slowly add more until all of the ingredients are blended. I also recently had the genius idea of putting my bowl in the freezer while I prepared the acai, which really helped to keep the acai cold for a few extra minutes.


Acai Bowl
Makes 1 serving

For the acai:
2 Sambazon smoothie packs (sweetened or unsweetened)
1/2 banana, preferably frozen
1/4 c frozen blueberries or berry blend
1/4 c apple juice or orange juice

Fresh fruit (strawberries, blueberries, bananas)
Honey for drizzling

Before making the acai, put serving bowl (or bowls) in the freezer to get them nice and cold. Add all ingredients to a blender. Blend until smooth. 
Note: I find it easiest to run the acai packs under warm water for a few seconds and then break them up a bit with my hands (while still in the pack)

Take your bowl out of the freezer and pour frozen blended acai into the bowl. Add toppings to your heart's content and finish with a drizzle of honey.
